This delicious apple cake is ideal for using up any apples you might have from this year's crop. Although the recipe says cooking apples, I have made it with other apples such Braeburn. It's delicious warm or cold, on its own or with some custard, cream, creme fraiche or mascarpone, just add the extra calories.
Ingredients:
110g Polyunsaturated margarine
110g Soft brown sugar
110g Self-raising white flour
110g Self-raising wholemeal flour
Pinch of salt
1 Egg, beaten
450g Cooking apples, peeled, cored and sliced
110g Sultanas
½ Teaspoon ground cinnamon
25g Demerara sugar
Instructions:
Preheat the oven to Gas Mark 5/190°C/fan oven 170°C. Grease a 20cm cake tin with ½ a teaspoon of the margarine, then line it with baking parchment.
Melt the remaining margarine in a small saucepan then, in a large bowl, mix it with the soft brown sugar, flours, salt, and beaten egg to make a stiff dough. Put about two-thirds of this dough into the prepared tin and press down.
In a clean bowl mix together the apples, sultanas, cinnamon and demerara sugar. Spread the mixture in an even layer over the dough in the tin. Top with the remaining dough - the surface will be uneven.
Bake the cake for 50-55 minutes. Cool in the tin for 10 minutes then remove it and place on a cooling rack. Allow it to cool completely before cutting into 16 slices.
